25 Days of Baking!

Ok people, Its December. Time for family, gifts, & most of all COOKIES.  I like to cook but I love to bake. (not get baked) This time of year I bake cookies as gifts or just do cookie swaps. So I figured as I watch 25 days of Christmas (on ABCfamily) I'll bake 25 different cookies & goodies.

Plus this gets me ready for my awesome new webisodes  "Pots, Pans, & Pro Wrestling"
Its a cooking show that I interview Pro wrestlers and we make their favorite dish.

Keep checking back everyday to see what I have made. I'll have pictures & of course the recipes. Some our recipes from scratch & others I semi-homemade with my little twist. Hope you like it and even try them out for yourselves. Enjoy!

Day 1: I'm Chipper
Potato Chips
Peanuts
Chocolate chips

~Put wax paper on a cookie sheet. Melt chocolate chips over the potato chips & peanuts. Broken potato chips are ok. Mix so that all is covered by the chocolate. Flatting out mixture on cookie sheet. Refrigerate till firm. Break in chunks. Eat up.

 

Day 2: Brownie Pumpkin Cheesecake
1 box Brownie mix
ingredients needed on box

2 pkgs  (8 oz) cream cheese, softened
1/2 cup sugar
1/2 cup canned pumpkin
2 eggs
1/2 tsp vanilla
1/2 tsp pumpkin pie spice

~Heat oven 350* Make brownie mix as directed on the box. spread in pan. Bake 28-30 min.
~Beat cream cheese & sugar until smooth. Beat in pumpkin. beat in eggs 1 at a time. stir in vanilla & pumpkin pie spice.
~Pour mixture over brownie & bake for 40-45 mins or until center is almost set. Cool 30 mins. refrigerate at least 2 hrs before serving.






Day 3: Cherry Brownies

ingredients needed on box
Cherry pie filling

~Make brownie mix as directed. Put in pan. Put the pie filling on top using spoon to swirl into brownie. Bake for 30 mins at 350*.  Easy semi-homemade but just different enough people will love it.





Day 4: Chocolate chip cookies
2 sticks butter                                     1/2 tsp salt
3/4 cup sugar                                      1 tsp baking soda
3/4 cup packed light brown sugar        2 1/4 cups flour
1 tsp vanilla extract                              12oz package of semi-sweet chocolate chips
2 eggs

~Heat oven 375*  Beat butter, sugar, brown sugar & vanilla until creamy. add eggs beat well.
~Stir dry ingredients together. Gradually add to mixture. Stir in choco chips.
 ~Bake 8mins sit on cookie sheet 2 mins then take off to cool.
#Tips: make batter early, refrigerate till ready to bake. Sometimes I make a few batters a time & bake the next day. plus it is easier to scoop the size you want when cold.





Day 5: Pumpkin Cookies
1/2 cup butter                         1 tsp baking powder
1 cup packed brown sugar      1/2  tsp baking soda
1/2 cup sugar                          1/2 tsp salt
1 1/2 cups pumpkin                 1/2 tsp ground nutmeg
1 egg                                       3/4 cup raisins or craisins (optional)
1 tsp vanilla extract
2 1/4 cups flour
1 1/4 tsp ground cinnamon

~Heat oven 350* Beat butter & sugars until creamy. Beat in pumpkin, egg, & vanilla until fluffy. Mix in flour, cinnamon, bakin powder, baking soda, salt & nutmeg until blended. Stir in raisins. 
~Bake 12-15 mins, cool on cookie sheet 2mins.
#Tips: Powdered Sugar Glaze on top makes it even better. 
1 cup powdered sugar,  2 Tbl milk, mix then drizzle on cooled cookies.






Day 6: Pumpkin Peanut Butter Dog Treats
2 eggs                                      2 1/2 cups flour
1/2 cup canned pumpkin          2 tbl peanut butter
1/2 tsp salt                               1/2 tsp cinnamon 

~Whisk all together, slowly adding in flour. Roll out to 1/2 inch. Cookie cut to size. Bake 350 till hard. (about 30 mins)




Day 7: Banana Chippers
2 3/4 cups flour            1 tsp baking soda
1/4 tsp salt                   1 cup butter
1 cup sugar                  1/4 brown sugar
1 egg                           1 large ripe mashed banana
1 bag peanut butter chips

~Combine flour, baking soda, salt in medium bowl, set aside.
~Beat butter, sugar, brown sugar until creamy. Beat in egg & banana until blended. Stir in flour mixure little at a time until combined. then add in peanut butter chips.
~Bake at 350* 10mins 2 mins cool on the baking sheet.





Day 8: Banana Doodle Cookies
~Same as Banana Chippers except NO peanut butter chip.  Mix 1/4 cup sugar & 1/2 tsp cinnamon in bowl. make Balls of dough then roll them in the cinnamon mixture.
#Tips: its great to make these at the same time. Plus this a great great for those who can't have peanuts. Just as yummy.


Day 9: Oatmeal Cranberry White Chocolate Cookies
2/3 cup butter                   2/3 cup brown sugar
2 eggs                              1 1/2 cups oats
1 1/2 cups flour                1 tsp baking soda
1/2 salt                             1pkg 6oz craisins
2/3 cup white chocolate chips

~Heat oven 375* beat butter & sugar together till fluffy. Mix in eggs.  
~Combine oats, flour, baking soda & salt in separate bowl. Slowly add to Butter mixture.
~Stir in chips & craisins.  Bake 10 mins.





Day 10: Spicy Oatmeal Raisin Cookies
1 pkg Spice Cake Mix            4 egg whites
1 cup quick cooking oats        1/2 cup canola oil (or veg oil)
1/2 cup raisins

~Heat oven 350* Blend all ingredients till blended. Then add raisins. Bake 8 mins.


Day 11: Ultimo Choco
1 pkg Chocolate cake mix           1/2 cup butter, melted
1 egg                                          1/2 cup semi-sweet chocolate chips
1/2 cup milk chocolate chips        1/2 cup white chocolate chips

~Heat oven 375* Mix all ingredents together till blended. Then add in the choco chips. Bake 9 mins.




Day 12: Marshmallow Krispie Brownies
1 pkg brownie mix                                    1 pkg (10oz) mini marshmallows
1 1/2 cups semi-sweet chocolate chips      1 cup creamy peanut butter
1 tbl butter                                                1 1/2 cups crisp rice cereal

~Heat oven 350* Make brownies to package. remove from oven & sprinkle on the marshmallows. Then bake for 3 mins.
~Melt chocolate, peanut butter & butter in saucepan till melted. Then add in cereal. Spread over marshmallows. Refrigerate till chilled. Cut into bars.
#TIPS: If you are like me and suck at melting chocolate. Melt chips in microwave 10 sec at a time using "defrost" stirring till melted enough.



Day 13: Snowballs
1 cup butter               1 cup sugar
1 tsp vanilla extract    2 cups flour
1/4 tsp salt                 1 1/2  cups pecans (used walnuts)
1/2 cup powdered sugar

~Heat oven 350* Beat butter, sugar, vanilla until creamy.  Blend in salt, flour & pecans. Refrigerate 1 hour.
~Shape dough into 1-inch balls. Bake 10 mins. When cooled roll in powdered sugar.




Day 14: Sugar Cookies 
2 3/4 cups all-purpose flour          1 teaspoon baking soda
1/2 teaspoon baking powder        1 cup softened butter
1 1/2 cups white sugar                  1 egg
1 teaspoon vanilla extract

~Beat butter & sugar till creamy. Add in vanilla & egg. Slowly mix in flour, baking soda & powder.
~Bake 8 mins at 375*  (I split the dough & added few drops of food coloring.)






Day 15: M&M's Cookies
~Same as chocolate chips recipe but used m&m's instead of chips.  Or try adding both for a better cookie. I might try it at the end with all my leftover chips and nuts.





Day 16: Potato Chip Cookies
4 sticks of Butter                               1 cup sugar
3 1/4 cup flour                                  1 1/2 tsp vanilla
1 1/2 cups crushed potato chips

~Mix butter, sugar, vanilla till creamy. Add in flour & potato chips. Bake 350*  12-14mins.



Day 17: Oatmeal Chocolate Chip Cookies 
1 1/2 cups packed brown sugar          1 cup butter 
1 teaspoon vanilla                               1 egg
2 cups quick-cooking oats                  1 1/2 cups  flour
1 teaspoon baking soda                      1/4 teaspoon salt
1 cup semisweet chocolate chips

~Mix sugar, butter, vanilla, egg. Add in rest of ingredients. Bake 8mins at 350*
#Tips: Don't forget the VANILLA! Its makes all the difference. Just ask Jordan lol





Day 18: Snicker doodles
2 3/4 cups flour      1/2 tsp salt
2 tsp baking powder   1 cup butter
1 1/2 cups sugar   2 eggs
1 tsp vanilla
coating: 1/3 cup sugar  2 tsp cinnamon

~Mix all together. Dough will be crumbly. Make dough balls and roll into coating.  Bake 350* 10mins.




Day 19: Doggy Treats #2
3 cups flour                    2 eggs
1/2 tbl galic powder       1 tbl poultry seasoning
3 tbl italian dressing        water

~Mix all together adding tbl of water at a time till dough forms.  Roll out, cut up to size treats.  Bake for 10 mins or till brown.



Days 20: Mint Choco chip Choco Cookies
Same as Ultimo Choco just using Dark Chocolate chip & Mint chips.  
#Tips: I think its easier to roll cookies in a ball instead of drop cookies.


Days 21: Butterscotch Chip Cookies
Same as Chocolate chip cookies just using butterscotch chips.
  

Day 22: Coco Crispy Cookies
Same as Chocolate chip just use Coco crispy cereal.  I think I should have used more like an oatmeal cookie. Still good though.

Day 23: Everything Cookies
Chocolate chip recipe again using EVERYTHING I had left over.  White chocolate chips, milk chocolate chips, semi-sweet chocolate chips, M&Ms, potato chips, walnuts, peanuts, raisins, the stuff I made on day 1.
#This was a big hit.

Day 24: Lasagna (Dasia X-mas gift)
1 lb ground beef                              small container of Ricotta cheese
8oz shredded Mozzarella cheese     1 egg
Italian seasoning                              garlic powder and/or minced garlic
jar of pasta sauce                            lasagna noodles (oven ready)

~Mix cheeses, egg, seasonings in a bowl.  Cook beef, drain grease. Add sauce to meat. 
~Layer noodles, cheese mixture, beef.  Put extra mozzarella cheese on top.  Bake for 45mins at 350* or till cheese melted.
#Tip: Putting some sauce on the bottom of pan so that noodles don't stick plus cook better.


Day 25: Spinach Dip (what I'm bring to Christmas dinner)
10 oz Chopped spinach            16 oz sour cream
pkg vegetable soup mix            1 cup Mayo
1 tbl minced garlic                    1 cup cheddar cheese
1/4 cup Parm cheese                Pumpernickle bread

~Mix altogether put in bread bowl. Bake 350* for 45mins or till HOT!
#Tips: I'm not a mayo or sour cream person but I love this dip. So maybe don't tell people whats in it.  I have another spinach dip that is also yummy. Email me for that recipe.
